Ingredients:
120g Lean Lamb
120g Potato
11g Pumpkin
5g Olive Oil
40g Carrot
40g Eggplant
40g Capsicum
40g Tomato
Flavour
Rosemary
Thyme
Oregano
Method:
- Cut and prepare all your veggies (steam potato so they all finish cooking at the same time).
- Coat trays with oil and herbs.
- Roast veggies for 30 minutes in the oven or until desired.
- Roast your lamb in the oven for 10 minutes or until desired.
